Apricot Almond Cake

1/4 cup butter
1/4 teaspoon almond extract
1 teaspoon vanilla extract
3/4 cup almonds
2/3 cup sugar
1/3 cup flour
3 peeled and slice apricots
1 tablespoon brown or white sugar
4 egg whites
1/4 teaspoon salt
Stick of Butter

Preheat oven to 400 degrees Fahrenheit. Spread a slice of butter on the bottom and around the sides of an 8-inch round cake pan. Set it aside. Place 3/4 cup of butter into a mug. Melt in the microwave on high for 10 seconds, then allow it to cool. Add the vanilla and almond. Put the almonds, 2/3 cup of sugar and flour into the food processor. Chop until the almonds are fine. Put the apricots into a small bowl and add 1 tablespoon sugar. Toss and coat the apricots. Separate the egg whites from the yolk and insert egg whites into a bowl. Add the salt. Beat the egg whites with a fork until they are stiff, approximately 1 minute. Pour the cup mixture into the egg white. Slowly add the almond mixture, stirring as it is added. Mix well. Pour the batter into the cake pan. Smooth the top so it is even across.
Arrange the apricot slices on the top of the cake. Place the pan into the oven. Set time for 25 minutes.
Stick a toothpick into the center of the cake once the timer goes off. Remove from oven if the toothpick has no batter on it, if it does, cook for an additional five minutes.
